Learn how we make our Gluten Free Brownies

So the most important part of our brownie is the chocolate. The dark chocolate we use is known throughout the industry for it's luxury and it's flavour. This is one of the reasons our brownies taste as awesome as they do.
The ingredients we use are locally sourced where ever possible and if not then Fairtrade where we can.

Our eggs are fresh, straight from the farm and free range, each brownie slab contains six whole eggs.
Our butter is salted where possible as I find this enhances the flavour and also means I do not add extra salt to the recipe.
We use caster sugar in all our brownies and our homemade sauces and refined light brown sugar in our blondies which helps to give a light caramel vanilla note.
Our Gluten Free Brownies are made with Gluten Free Flour and extra cocoa.

The ratio of luxury dark chocolate to sugar is the key to making our brownies the best there are.
Our brownies are soft and moist and the absolute best you can find!

The Brownies are stacking up!

The kitchen is all systems go this week. I love it when it gets so busy and I really have to organise myself.
These delicious brownies in the pic above are waiting to go in the oven to be baked to perfection. I have a tiny house with a tiny kitchen in the village of Dolphinholme near Lancaster, and just three shelves in my oven so baking can take a while!!! The oven is on for up to eight hours a day. Maybe I need two ovens but that would mean we would have to move house so I could have a bigger kitchen! I do envy those bakes who have a industrial kitchen. It must cut baking time down amazingly.
Each tray can take from 40 - 55 mins to bake depending which shelf they are on in the oven. With 1300 brownies to bake for some weekends you can imagine how long it takes!
The Jeni's Brownies stall will be out in Wigton this Saturday. It's bright pink for those that haven't seen it so we are easy to spot!!

Wigton here we come!

It's Wigton on Saturday

Mr JB's is off to Wigton on Saturday so please if you are out and about say 'Hi' to him so he feels wanted! This is our first event so this week I will be baking lots of brownies.
He will have double chocolate, salted caramel, oreo, fudge, nutella, minty areo, chocolate orange, peanut butter, flake brownies and some white chocolate blondies too.
Find him on Water Street car park with a live stage and lots of other stalls and family fun.
The above is what we would like the stall to look like by the end of the day!

Where to find us 2024

I have updated the Event page this week to add some new ones on for 2024.
Our first event is in Wigton on 20th April, run by Taste Cumbria. You will find Mr JB's there on his own so please say 'Hi' to him if you are passing.
It's a great event with lots to do for all the family, a big stage with live music and loads of stalls.
Our second event is at Animal Care in Lancaster on the 19th May. Another fabulous day out and an event where Sausage can come and help!
